Originally from Stockholm Sweden, Tartlets owner and pastry chef, Nina J. Hemmes, grew-up in a culture rich in desserts. At the age of five, Nina was rolling out Swedish treats with her grandmother for “Fika” (a Swedish tradition of taking a pastry with afternoon coffee). After meeting her future Canadian husband abroad, she made her way to Toronto where she worked as a baker at the well know “Wanda’s Pie in the Sky.” Here, she realized baking would be her career and thus, decided to further her pastry training. She enrolled in the professional pastry and bread making program at the Northwest Culinary Academy of Vancouver when she moved to the west coast with her then finance in 2005.After graduating from the professional pastry program, Nina honed her skills in the renowned Sutton Place Hotel pastry department. This experience installed the five diamond standards and training that make her the pastry chef she is today. Now, she brings these highest of standards to Tartlets, a Vancouver area business focused on wedding cake design, confectionary cakes, accessible pastry classes, and fine dessert catering. Her North Vancouver studio kitchen, tucked away in a lower Lonsdale alley, opened in October 2007 to much success. A typical day for Nina includes: consulting a bride-to-be on cake flavour and design, supplying a high-end savoury caterer with French petit fours, constructing a cake in the design of a corporate logo, and could finish with a class on truffle making. Such variety excites and energizes Nina, confirming the thrill of running her own business.
